food tuesday: butter brickle cake

Apparently in our youth there was a cake mix for butter brickle cake. I wouldn’t know – I was strictly a chocolate cake gal myself. However, it was my husband’s favorite cake. A few years ago I searched on the wonderful Internet and found a recipe that recreated the cake mix and was super easy. (I’ve got nothing against baking a cake from scratch but sometimes easy is good.) Matt’s birthday is this week so I dug out the recipe to make sure I’ve got the ingredients to recreate his childhood favorite. It’s pretty good – especially if you like toffee.
Butter Brickle Cake
1 box butter yellow cake mix
1 cup milk
1/2 cup butter (1 stick), melted
3 eggs
1 tsp vanilla extract
1 package of heath toffee baking chips
1 TB flour
1 tub of vanilla frosting
– Preheat oven to 350.
– Place cake mix, milk, butter, eggs & vanilla in a large bowl and beat on medium speed for 3 minutes.
– Toss 1/2 package of toffee bits with the flour in a small bowl. Fold the toffee bits into the batter.
– Grease the cake pan of your choice, pour in the batter and bake according to box directions.
– When cool, frost the cake and sprinkle the remaining toffee bits on top.
