Food Tuesday: Breakfast!

With the holidays coming up it’s nice to have some breakfast casseroles to prepare ahead of time and bake in the morning for overnight guests. They are also just right for a leisurely holiday brunch. Everyone I know has some variation on the sausage & egg casserole so I thought I’d give you a couple other ideas. Two recipes today – it’s like a super bonus day 🙂

Spicy Broccoli Breakfast Casserole
this one isn’t bad for a light dinner either

8 eggs
8 pieces of bread, cubed
3 cups of milk
2 cups of jalapeno cheese or pepperjack
2 cups of broccoli, chopped and lightly steamed

Place the bread cubes in a greased 9×13 baking dish. In a bowl, whisk together eggs and milk – pour over the bread. Spread the broccoli over the bread and top with the cheese. (I usually mix it slightly in the pan too, just to make sure everything is sitting in the egg mixture.) Cover and refrigerate overnight. In the morning bake, uncovered at 350 degrees for about an hour.

French Toast Casserole
I’ve got a healthier version of this that involves caramel but this one is a holiday treat

12 slices of bread, cubed
2 8oz packages of cream cheese, cubed (you can use the 1/3 less fat version if you want)
12 eggs
2 cups milk
1/3 cup maple syrup

Spread the cubed bread & cream cheese in a greased 9×13 pan. In a bowl, whisk together eggs, milk and syrup – pour over the bread mixture. Cover and refrigerate overnight. In the morning, uncover and bake at 375 for 45-60 minutes or until the center is set. Yummy served with a dusting of powdered sugar and/or fresh fruit.
