food tuesday: fast fish

I make fish or seafood once or twice a week. I’m not a ‘fishy fish’ eater so our menus for fish are tilapia, cod, flounder, salmon or tuna – pretty basic stuff. But the good news about that is my kids will eat it too. Here’s a recipe that’s super easy, super fast and versatile enough to work for grown-ups and kids.

Easy Baked Fish

4-6 fillets of your favorite white fish (tilapia, cod, flounder…)
1/2 cup wasabi mayonnaise
1/3 cup bread crumbs

1. Heat oven to 425 and line a baking sheet with foil
2. Arrange fish on foil, top with mayo and sprinkle with crumbs
3. Bake 15 minutes or until done in the middle

For the kids, we skip the wasabi mayo and just press the crumbs into the fish. Sometimes we get all creative and sprinkle a little parsley on too. Here’s the best part – this recipe is like legos – you can mix and match. Instead of bread crumbs try cornflake crumbs or panko crumbs or potato chip crumbs. Instead of wasabi mayo try dijon mustard.

Add your favorite side and a veggie and dinner is served! Fast. Easy. Healthy.
