I was reading an article about Bobby Flay this weekend, looking for some inspiration on the grill. I make my husband grill in January in the snow but now that we’re consistently getting warm weather I’m ready to grill all. the. time. I didn’t find what I was looking for (but it did make me have another dream about Bobby Flay – this time I was having dinner in one of his restaurants. He came over to sit with me and invited me to stay after closing for a private tasting session and some margaritas. sigh…) But in honor of grilling and margaritas I do have a tried & true recipe that I ripped out of some grocery store flier or store sample thing forever ago. I call it:
1/2 tsp lime zest
1/4 cup lime juice
2 TB tequila
2 TB honey (I bet agave syrup would be yummy but I can’t find it out here in the sticks)
1 TB cooking oil
2 tsp cornstarch
1/4 tsp garlic salt
1/4 tsp coarsely ground black pepper
4 skinless, boneless chicken breasts
1. Make the glaze: Mix everything but the chicken in a small saucepan. Cook & stir over medium heat until it’s bubbling away – then cook for another 2 minutes or so to get nice and thick. Remove from heat.
2. Grill your chicken and about halfway through start brushing on the glaze. If you’ve got some glaze leftover when the chicken is done – drizzle it over the top before serving.
This is good as-is with a salad on the side or rice and a veggie. You could also slice it up and serve it sort of fajita-style in tortillas with your favorite accompaniments.
