food thursday: sweet potato fries

Tis the grilling season! I don’t know about you but once warm weather is here to stay we’re cooking on our grill at least three times a week. No matter what you’re grilling… chicken, steak, burgers, salmon… you probably need something on the side. After all, one can only eat so many salads, chips or helpings of potato salad. Here’s a yummy alternative that uses the humble, healthy sweet potato – a vegetable that is often slighted this time of year.

Sweet Potato Fries
1 large sweet potato
cooking spray
2 tsp sugar
1/2 tsp salt
1/2 tsp hot shot (that’s black & red pepper mixed together – if you don’t have it use 1/4 tsp of each type of pepper).
1/4 tsp cinnamon

1. Preheat oven to 450 degrees and line a baking sheet with foil.
2. Peel potato and cut lengthwise into steak fries. Place in a large bowl, coat with cooking spray and toss to mix.
3. In a small bowl mix together all the seasonings. Sprinkle them over the potatoes in the bowl, again tossing to mix.
4. Place potatoes on your baking sheet in a single layer and bake for 15-20 minutes, turning them halfway. (ovens vary at this high of a temp and while these fries won’t get ‘crispy’ you still want them to be a little crisp on the outside without getting burned so start checking them for flipping around 7 minutes.)

(yes, I know, I forgot the foil when I made them this week – see everyone makes mistakes and it all turns out okay.)

There you have it – a low fat, vitamin packed side dish! Heck, even my non-sweet potato eaters like these. Note: One large sweet potato is enough for my gang but this recipe works well doubled too – just make sure your sweet potatoes have a little space between them on the baking sheet.
