food thursday: a thanksgiving side dish

Stuffing. Corn Bread Dressing. Green Bean Casserole. Broccoli Cheese & Rice. Mashed Potatoes. Sweet Potato Casserole. I often think that my favorite part of Thanksgiving isn’t the turkey… it isn’t even all the yummy dessert… it’s the sides. In fact, the day after I’ve been to know to eat an entire plate of just sides for lunch. Mmmmm!

In that spirit I will now share with you a recipe for a side dish that would be just lovely on your Thanksgiving table (or random Tuesday table for that matter). Let’s do something with sweet potatoes that doesn’t involve marshmallows!

Mashed Sweet Potatoes
4-6 sweet potatoes, peeled & chopped into chunks
4 TB butter
1 TB brown sugar
approx 1/2 cup milk

– Put potatoes in a pot with enough water to cover them. Bring to a boil and boil for 20 minutes. Drain and place in a large bowl with butter and brown sugar.
– Using a hand mixer, mash the potatoes – adding the milk a little at a time to reach desired consistency.

Can’t stand the thought of no sweet potato casserole on your table? Here’s one that I can’t describe from personal experience, but seriously does The Pioneer Woman ever disappoint?
