Everyone in the family likes fried fish (well except the ultra picky one of course). I, however, do not like the grease involved in the frying or eating of fried fish – blech. So this recipe is a huge winner in my book. The fish turns out with a nice crispy finish and just a hint of butter – but not a bit of grease in sight. It’s healthy and light and so, so easy.
Oven Fried Fish
4-6 pieces (about one pound) of tilapia or your favorite white fish
2 TB butter, melted
1 cup panko breadcrumbs
3/4 tsp onion salt
1/4 tsp black pepper
1 egg beaten
1 TB water
1. Preheat oven to 450. Cover a cookie sheet with foil and spread the melted butter all over the foil.
2. Mix the breadcrumbs and seasonings in a shallow bowl. Whisk together the egg and water in another shallow bowl.
3. Dip the fish into the egg mixture. Dip into the breadcrumb mixture, turning to coat. And place on the baking sheet – right on top of some of that melted butter.
4. Bake for 12-15 minutes (if your fish is more than an inch thick, add five more minutes). Fish is done when it flakes easily with a fork.
That’s it! We served it with a steamed veggie and some rice. My son recommends adding a little tartar sauce.
