Summer is busy and hot. Two things that beg for a dinner that is quick and won’t heat up the kitchen. A dinner like this one:
Hot Tuna Subs
1 package of coleslaw mix
2 9oz can of tuna
4 TB mayo
4 TB ranch or creamy cucumber dressing
4 sub sandwich rolls, split in half
4 slices of your favorite sliced cheese
1. In a large bowl toss together the coleslaw mix with the tuna and then mix in your mayo & salad dressing.
2. Spread this tuna mixture on each half of your sub rolls. Broil for 2-3 minutes to heat through (or use your toaster oven) then top with cheese and broil for one more minute.
We eat these as open faced sandwiches so it makes 8 of them. Add a bag of chips or some yummy melon from your farmer’s market.
