I love getting my kids involved in the kitchen. From a very young age – as in so young I used to plop them on the counter and put a bowl between their little legs – I’ve had them in the kitchen stirring and mixing. As they get older they can chop and help a bit more. Sometimes I can convince them to follow an entire recipe with just a touch of assistance or even be bold enough to add their own ingredients as we make something together.
I understand that if you aren’t too comfortable in the kitchen yourself, it becomes hard to involve your kids. I’m here to tell you not to be afraid! The worst case scenario is that you end up ordering pizza for dinner – and sometimes those nights make the best memories. Have I ever told you about the time that I dropped an entire crock pot full of food… we all watched it shatter and explode all over the kitchen floor… and after a bit of clean up we all went out for burgers. It is a story my kids like to tell to this day.
So get your kids in the kitchen! Here are two great recipes to kick things off from Cooking Rocks! Rachael Ray 30-minute Meals for Kids. My daughter has earmarked a ton of pages in this kid-friendly cookbook and this one is one of her favorites to make for breakfast, brunch or breakfast for dinner.
Potato & Apple Home Fries
– 3 TB butter
– 1 bag diced breakfast potatoes (in the refrigerated section of your grocery, I recommend Simply Potatoes)
– 1/2 pound diced ham
– 1 green apple (Granny Smith is good) peeled & diced
– 1 TB grill seasoning such as Montreal Seasoning or Mrs. Dash
Place a nonstick skillet on the stove over medium-high heat, add the butter and melt it. Add potatoes, ham and apples and season them. Turn every five minutes or so letting the potatoes brown up on all sides. Cook for 20 minutes and serve.
While those yummy potatoes cook, make these quiches!
Bacon & Cheese Mini Quiches
– 24 phyllo dough cups (available in the freezer section)
– 4 slices cooked bacon
– 1 cup shredded cheddar
– 2 eggs
– splash of milk
– salt & pepper
Preheat oven to 375 degrees.
Arrange pastry cups on a cookie sheet. Cut up bacon into tiny pieces with kitchen scissors and add a little to each cup. Add a sprinkle of cheese to each cup too.
In a bowl, beat together the eggs, splash of milk and salt & pepper. Place one tablespoon (approx) of the eggs to each cup to fill them up. Bake them 10-12 minutes until golden.
