food tuesday: nuts

What is it about the holiday season and nuts? Have you ever noticed that nuts are always on sale this time of year. People give them as gifts. People who normally don’t have nuts out for snacks, do this time of year. I’m not sure I understand to be perfectly honest. Maybe it’s because it’s damn cold outside (at least where I live) and people feel a little nuts all cooped up inside 🙂

okay – no more bad jokes. I do have a yummy nut recipe for you. It’s not mine, a good friend gave it to me (Hi Lara!) but it seems like a perfect gift or snack for this nutty time of year. Or frankly – any time of year! She uses cashews and/or almonds. I’m guessing pecans would work too. Enjoy!

Cinnamon Roasted Nuts

1 egg white
1 tsp cold water
16 oz whole almonds or cashews
1/2 cup white sugar (splenda works for those of you who care about that sort of thing)
1/2 cup brown sugar
1/2 tsp salt
2 tsp cinnamon
1 tsp vanilla extract

Preheat oven to 250 degrees. Line a 10×15 jelly roll pan with parchment paper or lightly grease the pan.

Lightly beat the egg white. Add water and beat until frothy but not stiff. Add the nuts and stir until well coated. Mix remaining ingredients and sprinkle over the nuts. Toss to coat and spread evenly on prepared pan.

Bake for 1 hour, stirring occasionally so the sugar dissolves and nuts look golden brown. Cool completely and then store in airtight containers.
